I have a number of quart jars of honey that has crystallized. Which is
fine, but there is a slight pressure (the lid is slightly distended and
pop when the jars are opened.

There is no harsh smell or other signs of having turned.

Should I be concerned?

My plan is to make a wart (boil with water) add a good yeast and brew a
batch of mead.

Well then, problem solved.

If the lids of the jars were distended, then I assume the the honey
was placed in the containers warm, a vacume developed when when they
cooled. This happens under normal canning processes using mason jars.
As a bee keeper myself, honey heated under 150 degrees F will
crystalize and during that process the volume will decrease slightly
in the container and that will also distend mason lids. As long as
there are no off smells it should be fine.
If you are a beekeeper yourself try to extract the honey without any
water on the combs or the extractor. Or if you purchased the honey
from a beekeeper explain to him the water got into the honey and that
it caused fermentation. I had 18 lbs of honey that had water in it and
it fermented strongly with a musty smell and taste( I heated this up
distroying any wild yeast and then made mead with it. But with no off
ordors or tastes the honey should be fine for other uses other then
mead or bee food.

Hi Roger,

I think that distended means swolen out not sunken in. Convex rather than
concave.

Fermentation would produce gas which would create pressure to that.

A vacuum would suck the lid inwards.

Mostly:

To stretch out or extend in all directions; to dilate; to
enlarge, as by elasticity of parts; to inflate so as to
produce tension; to cause to swell; as, to distend a
bladder, the stomach, etc.

Thank you Irie, it is reassuring to read these reports I've always thought
that beekeeping the agri-business way had no future and nothing has improved
to dispel my concerns.

Support organic foods.
